With American Thanksgiving saturating the media this week it only seemed fitting that I would make something with pumpkin, actually it was all because I started thinking of the pumpkin pie I made back in October and got mad cravings for another one. This time I decided to use the same recipe and turn the pie into tarts and man were they ever good. So good that I didn’t even get a proper picture of them before they vanished!
I used the recipe for the crust and the pie filling from Sarah Kramer’s cookbooks and it was so simple and so good that some people that I shared the tarts with had a hard time believing they were vegan!
