Day 180 – Apple Walnut Pudding

This week I feel a little scattered and like time is racing ahead faster than I can manage. With that said I’ve found it difficult to think/find cool things to make so I’ve resorted to pulling out my cookbooks, flipping through them and randomly picking a recipe I’ve never made to see how it turns out.

This recipe for Apple Walnut Pudding from one of Sarah Kramer’s books, intruiged me so I decided to try it out and it was really quite tasty, especially warmed up with some milk and cinnamon on top!

Here’s the recipe:

Ingredients
-Filling-
1/2 cup flour
– 1/3 cup sugar
– 3/4 tsp baking powder
– 1/4 tsp salt
– 1/4 tsp cinnamon
– 1/8 tsp ground cloves
– 1/4 cup “milk”
– 1/2 tsp vanilla
– 2 medium apples, cubed
– 1/4 cup walnuts, finely chopped

-topping-

– 1/3 cup water
– 1/4 cup sugar
– 2 tbsp maple syrup
– 2 tbsp vegan margarine

Directions:
Preheat oven to 375
– In a bowl, mix together flour, sugar, baking powder, salt, cinnamon, and cloves. Add in milk, vanilla, apples and walnuts and mix well. Spread into a baking dish.
– In a small saucepan, bring the water, sugar, maple syrup and margarine to a boil. Once margarine has melted reduce heat and simmer for a few minutes. Pour the topping mixture over the apple batter. DON’T STIR! Bake for 30-40 minutes.
